Tuna Melt Sandwich
While I really enjoy experimenting with different, complex recipes (both my own and by other favorite chefs), there are definitely occasions where I just want to quickly whip something up but still satisfy my cravings.
Like most people in the world right now, I'm learning to adapt to the new normal with shelter-in-place. I'm grateful to have the option to work from home during these crazy times. With my job requiring me to be in meetings most of the day, I have to be efficient when transitioning from meetings to lunch then back to meetings.
The other day, I had approximately 25 minutes to make and eat my lunch. I happened to have a couple cans of tuna so decided to make a tuna melt (something I haven't eaten since college?!). For whatever reason, this really hit the spot. It was fast, simple, yet so damn delicious!
Tuna Melt Sandwich

Cook Time: 10 min
Servings: 2
Ingredients:
4 slices of bread
2 tbsp unsalted butter (melted)
1 can of tuna (5 oz)
~4 tbsp celery (diced)
~2 tbsp mayo
2 slices of cheese
Cheddar is most common, but I used mozzarella in this example
1/8 tsp garlic powder
Pinch of salt and pepper, to taste
Directions:
Open can of tuna and drain out all of the liquid. Transfer to a small to medium bowl. Add celery, mayo, garlic powder, salt, and pepper. Adjust ratio of ingredients as desired.
Have the melted unsalted butter ready in a small bowl. Lay out your bread slices and use a cooking brush to brush the butter onto both sides of the bread.
Place a slice of cheese onto each of your two slices of bread. Then, evenly distribute the tuna mixture over the two bread slices with cheese. Use the remaining bread slices to place over your open face sandwiches.
Lightly grease your nonstick large pan and place over medium high heat. Once hot, place your two sandwiches on the pan. Let sit for about 3-5 minutes or until the bottom slice of bread is crisp and golden brown. Using a spatula, carefully flip the sandwich over. Let sit for about 3-5 minutes or until the bottom slice of bread is crisp and golden brown.
Transfer cooked tuna melt sandwiches to serving plate, and enjoy!
